One of the most impressive new arrivals is this Auberge-operated ranch-style hotel in Ulster County in the Catskills, set on its own 140-acre site with spa, outdoor pool, and 65 freestanding cabins. There are three miles of trails quilting the property, but the nearby Mohonk Preserve is a great option if you’d like to push your limits. Metcalfe raves about the in-room amenities, including foraging shears for you to use in the on-site farm; you can also help with the chickens, whether feeding them or collecting just-laid eggs for your breakfast.
