About the Ranches

  • Dinner with XIT Ranch

    In 1885, the Farwell brothers from Chicago founded the XIT Ranch of Texas. Texas traded the Farwell brothers 3 million acres in the Texas panhandle in return for building the new Capitol Building in Austin. Today, the XIT is family-owned and operated with locations at the original Rita Blanca division of the XIT west of Channing, Texas, and in Weatherford, Texas, outside of Fort Worth. While their first herd may have been a wild bunch of longhorns, today the XIT breeds and raises high-quality Black Angus and American Wagyu cattle. Core to their cattle program is their commitment to land stewardship. The XIT belief is that we must take care of our land so the land can provide for our livestock.

    Midland Meat Company was founded in 2015 by owners John and Amy Scharbauer. John is a fifth generation Scharbauer cattleman who continues his family's ranching legacy of over 140 years in Texas through Midland Meat Company. We are a family-owned and operated butcher shop dedicated to serving the highest quality beef through the pasture to plate philosophy. At Midland Meat Company you can expect the freshest and finest cuts of dry-aged Wagyu-Cross and Angus Hereford beef sourced directly from the historic Scharbauer Ranches.
