Experience a yearlong exploration of Baja’s most compelling culinary voices. In 2026, Baja Lab Kitchen expands across both Chileno Bay and Esperanza, creating a yearlong culinary program that brings the region’s most exciting chefs and winemakers into dialogue with the landscape, the seasons, and the traditions of Los Cabos. The series deepens its original mission: to treat Baja as an open laboratory for technique, terroir, and creativity, where visiting masters work side-by-side with our teams to reinterpret coastal Mexican cuisine through their own lens.

Across COMAL at Chileno Bay and Cocina del Mar at Esperanza, each month introduces a new perspective. Michelin-recognized chefs, rising innovators from across Mexico, and global talents rooted in craft and discipline come to cook in residence, host intimate dinners, and collaborate on one-night-only menus shaped by the tide, the farms, and the open flame.
