At the heart of the experience is a bespoke Vivoli gelato cart, serving a curated selection of artisanal flavours in a relaxed poolside setting. Guests can also discover Vivoli’s signature ritual, where gelato is finished with a pour of warm espresso — a timeless Florentine gesture reinterpreted at Collegio alla Querce. Younger guests are invited to take part in a hands-on moment, decorating their own gelato with the guidance of our Chef.
